The Ultimate Crockpot Beef Stew Your Kids Will Eat

If you have a crock pot then you are perfectly aware of its virtues.  This is one kitchen tool that can really be a good friend to you.  There is no end to the amazing things you can create in a crockpot with little prep work time.

Case in point, I found a wonderful recipe for a Crockpot Beef Stew that is simple enough that the kids will devour it and complex enough so that the adults will appreciate the layers of flavor and love it as well.

Make lots of this stuff because these warm home-cooked leftovers will be appreciated by everyone in the house!   This is also a wonderful and crowd pleasing dish to bring to a potluck.

Here are the ingredients:

  • 2 lbs. beef chuck, cubed (purchasing 3 lbs of beef chuck will result in approx. 2 lbs. when all trimmed, cut up and cubed)
  • flour for coating
  • 5 red potatoes, cut up into cubes (approx. 4 cups)
  • 2 onions, cut in large chunks (approx. 2 cups)
  • 2-3 stalks celery, diced (approx. 2 cups)
  • 8 oz. mushrooms, sliced
  • 4 oz. tomato paste
  • 1/2 cup semi sweet or dry red wine
  • 2 1/2 cups beef broth
  • 1 bottle Guinness Extra Stout beer
  • 2 teaspoons Worcestershire sauce
  • 1 bay leaf
  • 3 sprigs thyme
  • 1/4 cup freshly minced parsley
  • 1 teaspoon allspice
  • 1-2 Tablespoons cornstarch (or arrowroot powder)
