By Far The Best Paleo Pancakes!

My kids and I LOVE to eat pancakes but I don’t always feel good about serving them because it’s a meal that really weigh you down.  I personally avoid conventional pancakes altogether because no matter how good they taste, they always leave me feeling kinda sick and with low energy.

However, the great thing about pancakes is that you can easily steer them in a healthier direction and still keep them delicious.

This is a great PALEO recipe for pancakes that keeps all the yummy flavor and moistness but leaves out the heavy carbs and sugar content.

The ingredients are:

  • 1/2 cup sweet potato, microwaved until soft and mashed
  • 2 eggs
  • 1 tbsp coconut flour
  • 1 1/2 tsp cinnamon
  • 1/4 tsp baking soda
  • 1/4 tsp vanilla
  • coconut oil, for pan

Whenever I make pancakes, I usually triple the recipe (at least) keep the leftovers and warm them in the toaster oven for the next couple day’s breakfasts.  Makes breakfast super fast for the next couple days.
